Mapping cold and hot spots

Hi friends,

As far as I know the temperature mapping should be done in both empty cold warehouse(OQ phase) and fully loaded warehouse during PQ phase now my question is that what spots should be considered as hot and cold spots if place of these points are different in OQ and PQ?

Second question is how important is mean kenetic temperature in compare to mean temperature?
