I wanted to know if we can do a hold time study without doing it on EVERY product in manufacturing.
Can I select some products only with the worst case method.

No, you should perform the Hold time study for all individual products. Temperature & humidity are having different degree of impact on the Quality of the products, it may vary product to product.
